Katachi Amti

Katachi amti
Ingrediants
1 and ½ cups Katache Pani
1 piece Cinnamon2 bay leaves
8-10 curry leaves
1 tsp Mustard seeds
1 tsp Cumin Seeds
A pinch of asafoetida
2 tsp Red Chilli Powder
2 tsp Garam Masala
½ tsp Tamarind concentrate
3 tsp Jaggery
2 tsp Cumin Seeds, roasted
3-4 tbsp Dry coconut, grated and roasted
Salt to taste
1 tsp Corriander, chopped
Oil
Water

How to proceed:
1) Grind roasted cumin seeds and coconut to a thin paste
2) In a cooking vessel, add katache pani, tamarind, jaggery, red chilli powder, garam masala and salt to it. If you have Mahrashtrian goda masala, add 1-2 tsp of it
3) Bring this to boil and then add coconut paste
4) Boil for more time, add water if its too thick
5) In a separate pan, heat oil and add cinnamon, bay leaves and curry leaves to it. Then add mustard seeds and cumin seeds and a pinch of asafoetida.
6) When mustard seeds start spluttering, transfer the tadka to the aamti
7) Mix well and boil for another 5 mins.
8) Garnish with corriander and serve hot with puran poli.

Puran Poli


Ingrediants

2 cup of chana dal
2 cup of jaggery
1/2 tsp of cardamon powder
1/2 tsp of nutmeg powder
2 cups of all purpose Flour
1/2 tsp of warm oil/Ghee
pinch of salt
pinch of tumeric

Directions
1.Boil the chana dal in 8 cups of water in a pan
2.Remove the water while the dal is cooking ,which can be used later to prepare Katachi amti
3.when the dal is half cook,add jaggery to it & stir Cotinously till all water evaporates
4.Add the cardamom & nutmeg powder.
5.Now the puran is ready
6.Mix maida,salt,warm oil & tumeric powder
7.make small puris of the dough & filll the small balls of puran in it
8.Close the puri & roll to make puran poli
9.Heat the poli on both the sides on fry pan & smear with ghee
10.Serve with amti or milk or gulavni

Sweet Appam


This dish i like most & easier to make ---and moreover my hubby's favorite sweet,as he likes very less sweets .So i like to make appam for him.This dish is dedicated to him :)


Ingredients
Raw Rice - 1 cup
Urad dal - 1 teaspoon
Grated coconut - 2 table spoons
Jaggery - 3/4 cup
Cardamom - 1 no Oil -
little bit of oil


Directions
1.Wash and soak the rice and urad dal for 1 hour
2.Grind to a smooth paste adding very little water.
3.Add the jaggery and coconut and grind to mix well.
4.Add cardamom powder.The batter should be like dosa batter.
5.Heat Vessel in which you make appam on low heat and pour ladle full of batter in the Vessel 6.Put some oil on the appam . cook both sides till brown.

Mint Chutney


Ingredients
½ of a cup of mint leaves
¼ of a cup of coriander leaves (Cilantro)
5 green chilis chopped
1 ½ tablespoons of Ginger chopped
1 ½ tablespoons of Garlic chopped
3 tablespoons of lemon/lime juice
5 teaspoons of water salt to taste

Directions
1.Wash them well.
2.Blend it till smooth.
3.Blend all the ingredients together on medium speed in a blender; blend until the mixture has a smooth consistency.
4.Enjoy your chutney

Sweet dates Chuttney


Kajoor & Tamarind Chutney

Ingredients
14 Dates (Khajoor) (with the seeds removed)
2 tsp. of Tamarind Paste
1/4 cup of Jaggery
1/2 tsp. of Salt
1 tsp. of Red Chilli Powder (Pisi Lal Mirch)
1 tbsp. of Cumin Powder (Pisa Zeera)
1 tbsp. of Coriander Powder (Pisa Dhania)

Directions
1) Soak the dates for 15 to 20 minutes in hot water. Don't add water in excessive quantities. Add enough water to immerse the date seeds. Allow them to cool, and them put them in a mixer.
2). Add the tamarind paste, salt, red chilli powder, cumin powder, and coriander powder. 3).Grind into a fine paste, and pour into a ceramic container.
4). Add the Jaggery, and dissolve it into the mixture.

You can use this chutney with sev batata puri or any type of snack

Sev Batata Puri

This is recipie which i tried for Kiti party which we all friends have in our Appt

Everyone liked it so just posting it so that you ppl can also njoy :)

Small Puris - 20 (available at most Indian Grocery stores)
Sev - 1 cup Batata/Mashed potatoes - 2 cups Amchur powder - 1 tsp
Juice of lime/lemon - 3 tbs
Date-Tamarind chutney - 1/4rth cup Mint-Cilantro chutney - 1/4rth cup
Salt - to taste
Cilantro/Coriander - for garnish


Directions how to make Sev batata Puri
Arrange the Puris in a circle on a plate/serving dish.
Arrange a small ball of mashed potato on each puri.
Sprinkle amchur powder on each puri.
Add a small dollop of both the chutneys. Sprinkle Sev on each one.
Garnish with cilantro.
Enjoy.

At the same time ,you can make two more addition of dishes like dahi sev puri by adding little Curd on top & Bhel puri ( just add rice Puff & rest of the Ingrediants )

Muffin




Muffin

This recipe is dedicated to my daughter Gargi who initiated me to make muffin which came from the Nursery Rhymes

Here the recipe goes

INGREDIENTS (Nutrition)
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/4 teaspoons of Baking soda
1/2 cup milk

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Here the muffin are ready to eat ----which my daughter like very much
